My Burdock Experiment

Beth says I tried it before and hated it but I felt like I discovered the newest greatest thing when I tried Kinpira Gobo at the Japanese restuarant we go to.

Kinpira gobo is a salad made from sauteed burdock root and carrot. Now I only recently heard of burdock when it was mentioned in a recipe at http://www.goop.com/ for bibimbop.

Suddenly it's everywhere. So I decided I'd try to make my own. Now burdock is the longest root in the grocery store.

How long is it? (Too easy.)

So long that no bag will hold it. In fact at the Don Quijote where I got it they had their own packaging created just for it.

so I had to tilt it away from the camera.

I'm not going to tell you the recipe all I did was google it. But I will show the finished product.

  4. I have never seen this root in Indiana :( And I never did that with celery in school. Now I gotta go to the grocery and get some so I can teach my kids something that will amaze us all. How fun!

  6. burdock is quite delicious when prepared correctly...try Goya or Bitter Melon....its good as well if you like bitter...just gotta know how to finagle the Japaneese ingredients...anyone can do it

    i wish i lived in hawai'i, japanese food tastes 100 times better there than it does here.

  12. I used to live in Japan and i LOVE kinpira gobo! Never occurred to me to make it tho, i just go to the local Japanese market and buy it pre-made. ;-)

  15. Jorge - Did your recipe call for adding dried shrimp? "Crisping" dried shrimp and adding it to the kinpiri is my favorite way of having it. That's the way I like it and I have been eating it that way my whole life.

  16. You should go burdock root hunting in a place where it grows wild. You can find in Central Park and some other random places here in NYC. You'll need a big shovel and patience. The root will taste so much better after you have worked to dig it out of the ground first!

  18. Dandilion and Burdock was the best flavoured pop (juice) when I was growing up in Sunderland... It was made by a local company called 'Villa'
